This recipe turns everyone’s favorite dip into a protein-packed dinner. 👏⁣

This creamy spinach & artichoke chicken bake is loaded with lean protein, fiber-rich veggies, and bold flavor — all in one dish. 🧄⁣
⁣
Artichokes provide gut-friendly fiber, spinach adds iron and folate, and garlic + lemon support immunity and digestion. 🍋⁣
⁣
Best part? Everything mixes in one bowl and bakes in under 30 minutes. No extra pans, no fuss.⁣
⁣
Serve it over cauliflower rice for extra veggies, quinoa for whole grains, or do half and half for the best of both worlds.⁣

🧑‍🍳 Recipe below:⁣
⁣
INGREDIENTS⁣
• 6 boneless skinless chicken breasts, cut into thick strips⁣
• 1 red bell pepper, chopped⁣
• 2 cups baby spinach, roughly chopped⁣
• ½ medium yellow onion, finely chopped⁣
• 4 garlic cloves, minced⁣
• 1 lemon, zested and juiced⁣
• ½ cup grated parmesan⁣
• ½ cup mayonnaise (made with anti-inflammatory oils)⁣
• 1 tsp dried oregano⁣
• 1 tsp dried thyme⁣
• 28 oz canned artichoke hearts (in water), drained & quartered⁣
• ½ cup chopped parsley⁣
⁣
DIRECTIONS⁣
Preheat oven to 400°F and grease a 9×13-inch baking dish. Season chicken with salt and pepper if desired.⁣
In a large bowl, whisk together garlic, mayo, parmesan, oregano, thyme, lemon zest and juice, salt, and pepper.⁣
Stir in spinach, artichokes, red pepper, and onion until coated.⁣
Arrange chicken in the dish and spoon the mixture evenly over top.⁣
Bake uncovered for 25–30 minutes, until chicken reaches 165°F and the top is golden and bubbly. Finish with parsley and serve warm.⁣

Every year on my birthday, I pause to reflect on where I’ve been, where I am, and where I want to go.⁣

When I think about the past, I feel so much compassion for the girl in this photo. 💜⁣
⁣
She was stuck in a painful cycle of dieting, self-loathing, and feeling deeply uncomfortable in her body. That was me. It feels far away now, yet I remember it like yesterday. ⁣⁣
⁣
As an RDN with Lipedema who has lost over 170 pounds, I’ve learned so much about nutrition science. But back then, I was lost.⁣

And for those wondering — this wasn’t even my highest weight. I once hit 321 pounds. ⁣⁣
⁣
If I could go back, I’d give myself a few pieces of advice that would’ve saved me years of frustration, time, and money. Since I can’t, I’ll share them with you:⁣
⁣
⭐ Stop restricting, start nourishing. Everything changed when I focused on proper nutrition.⁣
⭐ Move your body because you love it, not because you hate it. Find movement you enjoy.⁣
⭐ Stop forcing yourself into someone else’s plan. Get curious and learn what works for your body.⁣
⭐ Stop guessing and get personalized testing. This was a game-changer for me.⁣
⭐ Choose long-term health over quick fixes. “Miracle” programs only set me back.⁣
⭐ Let go of perfection and all-or-nothing thinking. Stop “starting over” on Monday.⁣
⭐ Most importantly: your worth was never tied to your weight. Not then. Not now. Not ever.⁣
⁣
These mindset shifts are what finally led to sustainable success and peace with food and my body. I want that for you, too. 💜⁣

✅ Make fiber-rich energy balls with chia, flax, and oats

✅ Make air-popped popcorn as a snack and add nutritional yeast for flavor and even more fiber

✅ Bake a sweet potato and top with nonfat yogurt, blueberries, and pistachios for a sweet treat that’s packed with fiber

There was a time when my shoulders were padded, my eyebrows were aggressive, and my confidence was…........still buffering. 😂

Back then, I didn’t have the language for lipedema. I just knew my body felt different, and somehow that difference turned into shame, not just about my legs, but about me.

Showing up as your authentic self has a funny way of pulling the covers off shame. And once it’s exposed, it loses its power.

The truth? The lipedema community is full of women who are smart, talented, funny, sincere, loving, and deeply honest. That has never been lost on me.

If you know me, you know I love staying current on the research. Here’s what you need to know about a recent study on **Pycnogenol**.

💡 **What it is:** Pycnogenol is a bark extract from coastal trees in southwestern France. It’s rich in bioactive polyphenols with antioxidant and anti-inflammatory activity.

**The study:**
Over 60 days, 100 women with lipedema were studied. Half received Pycnogenol, half a placebo. Those taking Pycnogenol reported a **significant improvement in lipedema-related quality of life**.

⚠️ **Important context:**
The study was industry-funded. This doesn’t invalidate the findings, but it does mean results should be interpreted carefully and within the larger body of research.

**Beyond this supplement:**
Similar inflammatory and vascular pathways can also be supported through other well-studied options, including flavonoid-rich extracts (grape seed, green tea/EGCG, curcumin, quercetin, resveratrol), omega-3s (EPA/DHA), and vascular-support nutrients like vitamin C + bioflavonoids, rutin, butcher’s broom, and horse chestnut.
